HTN has a highly regarded recruitment division and assists in the selection of applicants and their placement with "Host Employers". Experienced consultants make frequent visits to support training development and to assist Host Employers and Apprentices/Trainees where possible. HTN's rotation system also enables apprentices to experience up to three work environments throughout the four year training contract which results in the apprentice qualifying with a diverse range of culinary skills.

In July 2003, HTN began operating as an Australian Apprenticeship Centre in partnership with MAS National. HTN is now able to provide advice and assistance with all Apprenticeship and Traineeships contracts lodged with the Department of Education, Employment and Workplace Relations (DEEWR).
